In a dutch oven or roaster, melt your butter and sauté' your onions, bell pepper and garlic with a few sprinkles of Beazell's Cajun Seasoning. Takes about 15 minutes to wilt these veggies. Stir in your flour to make a blonde roux.
Continue to stir while that cooks and blends for about 5 minutes. Very slowly and while continually stirring, add your half n half, lemon juice and cheeses. Mix well. Add shrimp and/or crawfish and crabmeat. Cook about 20 minutes. Add cooked noodles to mixture. Season with additional Beazell's Cajun Seasoning to taste.
