Stugfed Buffslo Chicken Sweet Potatoes

4 sweet potatoes 450 g chicken breast 1 msk butter 1 tsk hot sauce 1 msk tomato paste 1/4 tsk salt 1 tsk ranch seasoning dressing 0.6 dl blue cheese 1.2 dl creme fraich Chopped celery leaved ca 0.6 dl



Ugn 200 C
Wash sweet potatoes and place on a foil covered sheet pan. Bake for 45 min or until soft in the middle.
Under tiden, place chicken in a saucepan and cover w water and a pinch of salt. Poach until cooked through.
Remove chicken and let cool. Shred, then add to a sauté pan over medium heat. Mix in the butter, hot sauce, tomato paste, salt and ranch seasoning. Bring to simmer and cook for 5 min
Mix together the blue cheese and creme fraiche
Once the sweet potatoes are fork tender, remove from oven and slit down the middle. Divide the chicken between the potatoes, then top w the blue cheese sauce. Sprinkle w celery leaves and serve w hot ssuce on the side
