This recipe originally did not come with sausage or peas but it was amazing! Fed it to my boyfriend and his roommates and they ate it up!
Preheat oven to 375 degrees. Add salt to a large pot of water over high heat. While waiting for the water to bowl, slice 1 pound of sausage links diagonally into sections. In a sautee pan, cook the sliced sausage over medium heat with olive oil and Italian seasoning and minced garlic. Cover the pan with a lid. Once the sausage is completely cooked, remove from heat and set aside. Pour penne pasta in the bowling water. Set timer for 10 minutes. Drain the pasta and keep warm. Puncture holes in the bag of frozen peas. Microwave for 3 minutes. In a medium sized bowl, beat 2 cups of ricotta cheese and 3 eggs together. I found it best to this in increments. I also added some milk to make it creamier. When the mixture is smooth, add 1 cup of mozzarella cheese in the mixture. Season the cheese mixture with salt and pepper. Grease an oven safe pan with butter. Place 1/4 of the noddles on the bottom of the pan. Spoon over 1/4 of the cheese mixture. Layer 1/4 of the peas over the cheese mixture. Place 1/4 of the cooked sausage. Cover this layer with shredded mozzarella cheese. Repeat until all ingredients are layered. Place dish in the oven and allow to cook 35 minutes. When done, sprinkle Parmesan cheese on top. And then enjoy.
